Go Nuts Florida
November 2006Peanuts, a fun versatile food with deep roots in Florida agriculture. Most people think of them as a nut, when in fact they are actually legumes, part of the same family as peas and beans. Originally thought to have come from China or South America, peanuts are also cultivated in seven counties in northern Florida year around. They are a staple in many African, Thai and Indonesian diets. You can find them salted, roasted, raw, in popcorn, or ground into peanut butter, plus many more. They are very high in protein and a good source of magnesium.
It is important to store peanuts properly. Shelled peanuts can last up to eight months in the refrigerator and unshelled only three months and both need to be in an air-tight container. Peanuts are a near-perfect snack food and a healthy alternative to processed foods.
I encourage you to incorporate peanuts into some of your own recipes.
Supporting Florida's agriculture is a fun and tasty way to enjoy food. Here is a favorite recipe of mine using several of Florida's wonderful commodities. Enjoy.
